Cilantro Ginger Shrimp

This recipe is a great simple entree, or a perfect addition to add to a larger meal for a group.  I cooked them up in the saute pan this time around, but these would be just as easy to double-wrap in foil and toss into the coals just before everything else is done cooking.

Cilantro Ginger Shrimp_01Gather Up:

  • 1lb medium prawns (about 20~25), peeled and de-veined*
  • 3/4 cup cilantro, chopped
  • 2 cloves garlic, minced
  • 1″ piece ginger, peeled and minced
  • 1/2 tsp coarse sea salt
  • 1/2 tsp black pepper
  • 3 tbsp butter, softened
  • juice of 1 lime

Cilantro Ginger Shrimp_02Chop up the cilantro and mince the garlic and ginger.  Toss them into a small mixing bowl, then add the salt and pepper.  Mix together with the butter, then add the lime juice.

Cilantro Ginger Shrimp_03Add the cilantro-ginger mixture to the shrimp in a medium bowl and mix to coat well.  At this point, if you are going to grill these, you can double-wrap them in a sealed foil packet and set aside until about 10 minutes before the rest of the meal is ready.

Cilantro Ginger Shrimp_04If you’re going to cook these in a pan, then heat a saute pan over medium heat. Toss the shrimp in and cook, stirring constantly, until opaque and just cooked through – about 8 to 10 minutes.  Cooking on the coals, place the foil packet directly in the coals (or on a grill set to HIGH) and cook about 8 to 10 minutes.  Serve immediately.

Ingredients

  3. Mix together with the butter, then add the lime juice.
  4. Add the cilantro-ginger mixture to the shrimp in a medium bowl and mix to coat well.
  5. Heat a saute pan over medium heat.
  6. Toss the shrimp in and cook, stirring constantly, until opaque and just cooked through – about 8 to 10 minutes.
  7. Serve immediately.
Notes
Add about 20 minutes to the prep time if you have to peel and de-vein the shrimp yourself before starting.

An optional way to cook is to double-wrap these in a sealed foil packet, then place directly in the coals (or on a grill set to HIGH) and cook about 8 to 10 minutes. Keep sealed in the foil until you serve them.
