Paleo Fish and Chips

I mentioned having fish for dinner and so my daughter thought we should try some fried fish as she heard my grandfather used to fry fish all the time. We actually didn’t cook up any “chips”, but you can find the recipe for sweet potato fries by clicking on this link. I took some sweet relish and mixed it in homemade mayo and it turned out great for dipping (similar to tartar sauce)! Kids will enjoy helping with this one and will love the final result!
- 1 to 1.5 pounds of halibut or cod
- 1/2 cup or so of coconut oil, divided
- 1.5 cups of almond flour
- 1 egg
- 2 tablespoons of Old Bay Seasoning
- 1 tablespoon of dill
- 1/2 teaspoon of salt
Cut up the halibut into small chunks.
Put 1/4 cup of coconut oil into a pan (a nonstick pan works best for this). Heat pan to medium heat.
Whisk the egg in a bowl. In a separate bowl, mix the flour and spices.
Create an assembly line by coating a piece of fish with egg and then dipping into the flour mixture and then placing in the pan of hot oil.
Flip the fish with tongs to make sure it cooks thoroughly. You may need to continually add coconut oil to the pan to cook all the fish. Fish may flake and coating can also easily break off, so flip gently. Place cooked fish on a plate until all is done. Enjoy!!
